Strawberry Almond Chia Pudding

Ingredients

  • 1 cup unsweetened vanilla almond milk or non-dairy milk of choice
  • 1 cup plain Greek yogurt (preferably Forager, dairy-free)
  • 2 Tbs maple syrup or 2-4 drops of stevia to sweeten
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cups chia seeds
  • 1 cups strawberries, hulled and diced
  • 1/4 cups sliced almonds

    • Chia seeds are an excellent source of omega-3 fats which help your neurotransmitters communicate with one another.

    Instructions

    Step 1

    Hull and dice strawberries the day you are serving pudding

    Step 2

    In a medium bowl, whisk together the almond milk, yogurt, maple syrup, vanilla, and salt. Whisk in the chia seeds. Let stand for 30 minutes and stir again to ensure all chia seeds are incorporated and not sticking to the bottom of the bowl. Cover and refrigerate overnight.

    Step 3

    The next day, spoon pudding into bowls and top with strawberries and almonds. 

    Step 4

    Consider other flavor combinations like cherries with dark chocolate or raspberry and lemon with hemp seeds. The sky is the limit!
